Apple berry crisp with vanilla ice cream

Is there anything more delicious than warm apple crisp? This one features blackberries too, making it a perfect pairing for a cozy winter treat. There’s little added sugar and a lot of yum. For the filling

  • 1 tablespoon coconut (or olive/vegetable) oil
  • 2 apples, cored and thinly sliced (we used Granny Smith)
  • 1 teaspoon cinnamon
  • 2 cups fresh blackberries (or sub your fav berries)
  • 2 teaspoons cornstarch or arrowroot powder
  • ¼ cup maple syrup
  • 2 tablespoons lemon juice

For the crisp

  • 1 cup rolled oats
  • ½ cup almond meal (almonds ground into flour) or regular flour
  • ¼ cup coconut or brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup coconut (or olive/vegetable) oil melted
  1. Heat oven to 375° F.
  2. Heat 1 tablespoon oil in a 9-inch cast iron skillet (or spray a 9-inch pie plate with cooking spray).
  3. Toss apple slices in cinnamon and add to heated skillet. Cook for about 3–7 minutes until softened.
  4. Toss berries in cornstarch, maple syrup, and lemon juice; set aside.
  5. Combine all crisp ingredients in a medium bowl; set aside.
  6. Remove skillet from heat and add berry mixture to the apples.
  7. Sprinkle crisp mixture over the top of the fruit mixture.
  8. Bake for 35–40 minutes. Allow crisp to cool before serving.

Optional: Serve with vanilla ice cream or yogurt!
